Fiaschetto Tomato from Torre Guaceto grown organically at almost 50 metres above sea level, in the Torre Guaceto Reserve.
Harvested by hand and processed within a few hours, the tomato is cut in two, dried in the oven at medium temperatures for 10-14 hours, flavoured with pitted Leccine olives, capers and aromatic herbs and finally preserved in a jar with Extra Virgin Olive Oil .
The drying method used allows the tomato to lose only the excess water, concentrating all the juices and sugars contained within it.
