Zuchinis grown in open fields following the natural growth cycle and processed manually within a few hours of harvesting.
They are selected, washed, sliced and then placed in special tanks for salting.
Once the excess liquids have been lost, they are rinsed with water and vinegar and placed in the jars with extra virgin olive oil , garlic, chilli pepper and mint which gives them a very pleasant sensation of freshness.
