Bluefin tuna is the most valuable tuna species in the world. Bluefin tuna caught in the waters of the Western Mediterranean Sea (FAO 37.1) as they quickly travel across it to reach the mild, temperate waters where they spawn each year are called "running bluefin tuna".
The belly is the most noble and prized part of the tuna; it is processed with an artisanal process, delicately prepared and placed in selected olive oil, this specialty stands out for its soft consistency and enveloping taste that melts in the mouth.
